Sushi chef

ABOUT THE COMPANY:

  • 5-star luxury resort in Mauritius is looking for a Sushi chef.

Job Summary

Fully qualified and passionate about the hospitality and culinary induction, the Sushi Chef is responsible for operating the Japanese/Sushi section of the kitchen to deliver an exceptional guest experience through the production of our food offerings (sushi/maki, etc) and in accordance with Hotel standards and norms.

WHAT YOU WILL DO:

  • Be responsible for the smooth running of the Sushi Kitchen operations as per agreed standards and whilst respecting the budget and optimising the costs
  • Lead, coach and train the Sushi kitchen team to deliver the best experience to offer an exceptional guest experience and a high level of customer satisfaction
  • Follow all opening, maintaining, and closing duties of the sushi restaurant
  • Manage the daily production, preparation and sushi restaurant maintenance
  • Create high quality sushi, including including maki, nigiri and sashimi amongst others according to outlet standards and norms
  • Follow all the recipes, portioning and presentation standards for each menu item
  • Keep up to date with sushi making trends and conceptualize new dishes accordingly
  • Creatively display and arrange food presentations
  • Receive, store and control food stock (quantity and quality)
  • Conduct inventory of stock as per hotel’s standard
  • Ensure that sushi restaurant, equipment, and utensils are clean and in orderly condition
  • Ensure full compliance with operating standards and regulations including food sanitation, health & safety and quality
  • Other duties as assigned
YOU MUST HAVE:

  • Must asian nationality (Nepalese, japanese, Malaysian, etc).
  • Certificate/Diploma in culinary arts
  • At least 3-5 years experienced as Sushi Chef in a fast-paced environment.
  • Experience in a 4* hotel environment will be a definite advantage
  • Excellent up to date knowledge of various sushi types and sushi-rolling techniques
  • Self-starter, innovative and creative with a strong ability to multi-task
  • Understanding of food cost
  • In-depth knowledge of sanitary food handling principles
  • Flexible to work various shifts and weekends
  • Outgoing personality
  • Strong Organizational skills and ability to work under pressure
  • Excellent leadership skills
  • Excellent communication skills, both verbal and written (English)
  • Great attention to detail
  • Exceptional Customer-Service
  • Creative Problem-Solving Skills
