We are seeking a visionary Executive Pastry Director for a high-quality, rustic French pastry shop and restaurant south of Fall River, MA. This destination operation, which has earned acclaim from The New York Times, combines a high-volume scratch bakery/cafe with an intimate fine-dining restaurant. Position Responsibilities
- Oversee all pastry and bread production for a high-volume cafe ($5M annual volume) and a 42-seat fine-dining concept.
- Manage, train, and inspire a production team of 8–15 bakers, fostering a culture of respect and professional growth.
- Scale recipes and production processes efficiently to meet high demand while maintaining uncompromising "from-scratch" standards.
- Direct the aesthetic vision for all pastry offerings, ensuring products align with the brand’s high-end, destination-worthy image.
- Maintain a "player-coach" presence, arriving early (approx. 5:00 a.m.) to oversee quality control and participate in production.
- Collaborate closely with the Director of Hospitality and Director of Operations to ensure seamless service and brand consistency.
Position Requirements
- Extensive experience in high-volume, rustic French pastry and scratch bread production.
- Proven track record of scaling bakery operations without losing artisan quality.
- Exceptional aesthetic sensibility and a portfolio demonstrating "destination-level" finished pastries.
- Resilient leadership style with the ability to handle direct critique and manage a diverse production team.
- Strong "hands-on" work ethic and the physical ability to meet the demands of an early-morning bakery schedule.
- Singular professional focus; no outside consulting or "side gig" commitments.
Compensation Package Details
- Base Salary: $125,000 – $175,000 (negotiable, for the right experience).
- Performance-based bonus program.
